Sriracha Roasted Vegetable Pasta

It’s been a weird weather week, it rained for a day and then the sun came back. So it’s back to being very humid and hot. Along with which I managed to twist an ankle and have been limping around like crazy. Had planned to make focaccia, but since the limping, the ability to stand for too long is almost non existent.
So instead I tried a new recipe and added my own twist on it.

I’ve always been very fond of pasta, the mix of flavours and the ideas to reinvent old tastes is loads of fun. This one was literally no work, all I did was roast up some of my favourite vegetables and boil up some pasta, mix and serve!

So here’s how I made whole wheat pasta with roasted peppers, onions and tomatoes. I added some sriracha to the vegetables while roasting  to give it my own little twist on yum!

Ingredients:

Onions (quartered)
Tomatoes (diced)
Bell peppers (diced)
Whole wheat elbow pasta (any other is fine too, but elbow pasta suits best really)
Cider vinegar
Sriracha sauce
Worcestershire sauce
Olive oil
Salt and pepper

Toss the onions, tomatoes and peppers with the vinegar, worcestershire and sriracha sauces in a mixing bowl. Drizzle over with oil and salt and pepper and toss again to coat evenly.
Preheat the oven to 190°C. Spread the vegetables evenly on a large roasting tray and set in the oven for 30 to 40 minutes.
Ten minutes before the oven goes off, prep the pasta, boil it till al dente.
Save half a cup of the pasta water and drain the rest.
When the vegetables are done, there’ll be a lovely sticky sauce in the pan, remove it all to a large serving bowl, add the pasta and toss to mix. Add some of the pasta water in necessary to moisten everything.
Grate over some parmesan and you’re good to Omnomnom! Simple, quick and easy on your feet! No work, yummy pasta is ready!
